All The Watermelon

I hope you all had a wonderful, relaxing Memorial Day Weekend with your friends and family. The weather was perfect for spending time on the beach, walking around the park, running in races and firing up the grill. Most importantly don't forget the true meaning of the holiday and thank all of our heroes who served and are continuing to serve our country.

Soul Body went from barre to beach this weekend teaching at Beach Body Barre, Bethany's first exclusive barre studio.




Soul Body also celebrated Memorial Day with a packed Body Barre class at West OC Fitness

Blended Watermelon

Lime Juice
Tequila (optional)

Skinny Burritos (in a jar)

Happy Wednesday. Well since I forgot to share this yesterday for Taco Tuesday, you'll now have plenty of time to prep for next week. We all know we will need some healthy eating after Memorial Day Weekend.

 I have a recipe (actually two recipes) coming at you this week. We all love tacos and we love them even more when we don't feel guilty about eating them. So here are two for you to try. Try them and let us know what you think.

The first recipe I received from a fellow spin instructor at Merritt Athletic Clubs, Tracy. Many of you probably know her and have taken her spin class.

A Chair Workout and More from Denver

Surprise....more rain!!! Can you believe next weekend is Memorial Day? Where did the month go? It's looking like it might just be the perfect time to break out the swimsuits and show off all the hard work you put in these past couple of months (and get a little tan). Check out Kelly's chair workout to get a little extra burn and tone those arms while you're stuck indoors watching Netflix.

Now back to some of my great finds while in Denver last week.  Has anyone ever been to Sprouts? I really wish we had them here on the east coast. They had so many of my favorite things that I just have to share.

I love all of the Love Grown Foods products including their Super Oats with chia and quinoa. I am also a huge fan of their Power O's which are made from beans. The chocolate is my favorite. You can check out more of their products on their website. If you are looking to try them check out The Fresh Market in Towson or you can order them online. I also spotted purely elizabeth oatmeal. I've never tried it, but I've the granola and it's pretty tasty. 


I also stocked up on some snacks for traveling. 
- Amazing Grass green superfood
- Wild Friends Foods almond and sunflower butter
- Nii Bar (first time trying these and I'll definitely purchase more)
- Chicken Epic Bar (these became my new favorite after completing the Whole30)



It's the season for Farmer's Markets so while in Boulder we made a stop to check out some of the stands and grab a quick lunch. There were so many things to try so I ate my way through the market.




     

I decide to have these Avocado Half Shells stuffed with a beet dressing from Zeal Food for lunch. Pretty sure I should have ordered two!!

Hello from Denver

Well we made it to Friday which means.....WEEKEND!!! We have a new workout for you that you can take anywhere and doesn't take a lot of time so check it out!



I'm actually writing to you all from Denver and I'm so excited to share some great things with all of you over these next couple of days. I've been hitting up some of the local places here and getting in some amazing outdoor workouts. 

Just a few places that I've come across so far that are definitely worth checking out if you are in the area. 

First stop...lunch at Ale House at Amato's which is located in LoHi. Gorgeous views and a pretty stellar menu. I had the Quinoa & Roasted Vegetable Salad which was vegan and gluten free. 




It was sunny and so after all the rain on the East Coast I decided to catch some Vitamin D and hit the pavement for a few easy miles.



This morning was November Project Denver which met at Union Station for today's workout which was BINGO. Do yourself a favor and just show up at Rash Field on Wednesday at either 5:30am or 6:30am or on Friday at Patterson Park at the corner of Linwood and E Baltimore. Trust me...you'll have a whole different outlook on workout out.


And of course, coffee is always a good idea after a good sweat. My sister and I stopped at Common Grounds Coffee. Drink of choice was an american with steamed almond milk.

Favorite Things with Kelly Rabil

Hello Sunshine!! Well after a very wet and dreary week it was nice to finally see the sun this weekend. Fingers crossed we have some spring-like weather these next couple of days.  

Anyone else take advantage and get outside today? I actually had a free Saturday morning and decided to head over to the Fells Point Farmers Market. Local markets are perfect for stocking up on fresh, local produce, flowers, baked goods, coffee and much much more. 

First stop....Zeke's coffee.


I also picked up some apples from the Historic Round Barn which is actually located in my hometown.



I didn't buy any of these, but couldn't pass up taking a picture because they looked delicious. Has anyone ever had Diablo Donuts?

Taco Tuesday Round 2

Taco Tuesday is baaackkkkk!!!! This time taking another healthy approach with these Mexican Quinoa Stuffed Peppers. These are extremely versatile and you can get pretty creative with all of your ingredients. Here is how mine went down...


Quinoa Stuffed Peppers



What you need:

3 Bell peppers (green, red, orange or yellow)
1/2 cup of black beans (drained)
1 - 2 cups cooked quinoa 
Salt, pepper, chili powder,  to taste

Optional Add-ins: 
Protein: ground turkey, beef or chicken, 
Salsa
Jalapenos
Corn
Tomatoes
Cilantro
Green Onions
Green Chilies


Directions:
1. Preheat oven to 350 degrees

2. Slice peppers in half, clean out seeds and place on lightly oiled cookie sheet (line cookie sheet with aluminum foil for an even easier clean up)

 

3. Next- place the cooked quinoa, black beans, seasonings and add-ins in a mixing bowl. I used quinoa, ground turkey, black beans, salsa, chili powder, cumin, salt and pepper.


4. Once combined, stuff each bell pepper with the quinoa mixture
5. Place in the oven and bake for 35 minutes
6. Remove from the over and top with any of your favorites toppings - cheese, avocado, over easy egg, sour cream, hot sauce, etc. 

Mine came out like this...

Topped with an over-easy egg and some avocado!!

Get Outside SB Style!

Rain rain go away. Well...not the ideal weekend to be outdoors, but for when it clears up we have the perfect outdoor barre workout that you can take anywhere. So grab your friends, lace up and just go.
